Grapefruit Diet Recipe
Grapefruit and Cheese Salad
Serves 4
Grapefruit and Cheese Ingredient:
2 pink grapefruit
1/2 lettuce
1/2 oak leaf lettuce
2 ripe avocadoes
175 g/6 oz dolcelatte cheese, thinly sliced
fresh basil sprigs to garnish
Dressing
4 tbsp olive oil
1 tbsp white wine vinegar
salt and pepper to taste.
Preparation Method for Grapefruit and Cheese Salad
Arrange the lettuce leaves on 4 serving plates or in a salad bowl.
Remove the peel and pith from the grapefruit with a sharp serrated knife, catching the grapefruit juice in a bowl. Segment the grapefruit by cutting down each side of the membrane. Remove all the membrane. Arrange the segments on the serving plate.
Peel and slice the avocados, dipping them in the grapefruit juice to prevent them from going brown. Arrange the slices on the salad with the dolcelatte cheese.
To make the dressing, combine remaining grapefruit juice with the olive oil and wine vinegar. Seasoned with salt and pepper to taste, mixing thoroughly to combine. Drizzle the dressing over the salads. Garnish with basil leaves and serve immediately
