Pink Grapefruit and Mint Sorbet

Ingredients For Pink Grapefruit and Mint Sorbet

3 large pink grapefruit
6 oz (170 g) caster sugar
1/2 pint (280 ml) water
4 tablespoons chopped fresh mint

Preparation Method For Pink Grapefruit and Mint Sorbet

Cut the peel from one of the grapefruit using a sharp knife, taking only thin layer of zest and none of the pith.

Put the zest into a saucepan with the sugar and water and heat it gently until the sugar dissolve completely.  Simmer the syrup for 5 minutes, then take it off the heat and stir in the mint.  Set it aside until cold.

Squeeze the juice from all the remaining grapefruit and strain it.  Strain the cold syrup and stir it into the grapefruit juice.

Freeze in the ice cream maker follow the manufacturer instruction.  More chopped mint can be added into the partially frozen sorbet to make it more minty.
