Grapefruit Sorbet with Campari and Mint
Campari is an Italian liqueur that contributes both color and flavor to this ice. You should be careful not to add additional liqueur or the sorbet may turn bitter
Ingredients For Grapefruit Sorbet with Campari and Mint
500 ml ( 16 fl oz pints) fresh pink, ruby or red fresh grapefruit juice
225 g (8 oz) sugar
1 tbsp Campari
1 tbasp golden syrup
1 -2 tsp grenadine to taste
140 ml (5 fl oz) Campari Mint Syrup (recipes belows)
Fresh mint for garnish
Campari Mint Syrup Ingredients
115 g (4 oz) sugar
120 ml (4 fl oz) water
1 large sprig of mint, plus 1 tbsp shredded fresh mint leaves
3-4 tbsp Campari
Preparation Method For Grapefruit Sorbet with Campari Mint
In a large bowl, combine the grapefruit juice, sugar, Campari, golden syrup, and grenadine. Whisk to blend. Cover and refrigerate for 2 hours or until cold
Pour into the canister of an ice cream maker and freeze according to manufacturer's direction. Transfer Sorbet to a covered container and freeze until it is firm enough to scoop. This will require at least 3 hours or overnight.
To serve, scoop the sorbet into chilled stemmed glasses. Drizzle about 1 1/2 tbsp Campari-Mint Syrup over each serving and garnish with a mint sprig. Serve at once.
Preparation Method for Campari Mint Syrup
In a small saucepan, combine the sugar, water, and mint sprig. Bring to boil over medium heat, stirring to dissolve the sugar. Reduce the heat to medium low and simmer for about 10 minutes without stirring. Cover and remove from heat. Let cool to room temperature.
Strain the mint syrup into a bowl. Discard the mint sprig. Stir 3 tbsp of Campari syrup. Taste and add more if needed. Cover and refrigerate for 2 hours. Just before serving stir in the shredded mint.
Makes about 140 mol (5 fl oz).
In a food processor or blender, combine the grapefruit juice, sugar and tofu. Process until smooth. Scrape the mixture into a large bowl. Cover and refrigerate for 2 hours.
Stir to blend and pour into the canister of an ice cream maker. Freeze according to manufacturer instruction. Eat at once or transfer to a cover container and freeze for about 1-4 hours before serving
